HOW ARE CHOCOLATE CLASSIFIED?

🤔 Have you ever wondered how many types of chocolate there are? Based on what criteria to divide?

👍 Chocolate can be classified on the basis of shape and taste due to the blending of different ingredients, or also by the temperature and time of the cocoa bean baking. Here are a few classifications based on the composition of Chocolate:

🍫 Bitter Chocolate (or chocolate powder) is pure chocolate with strong aroma and natural bitterness of the cocoa tree.

🍫 Dark chocolate is chocolate that does not mix with milk, it is sometimes called “pure chocolate”. (The US government requires at least 15% of solid chocolate, while in Europe it is 35%)

🍫 Milk chocolate is chocolate mixed with milk powder or condensed milk to create a sweet taste. (The US government requires at least 10% of solid chocolate, while the EU regulates at least 25%)

🍫 Moderately sweet chocolate is often used in cooking. It is dark chocolate with a very high sugar content inside.

🍫 Bitter Sweet Chocolate is a type of chocolate containing sugar, more cocoa butter, and also contains lecithin and vanilla. (As a rule, the more cocoa, the more bitter the chocolate becomes.)

🍫 Couverture is a chocolate containing more cocoa butter. These varieties contain a lot of cocoa (more than 70%) and have a high fat content (30-40%).

🍫 White chocolate is cocoa butter that has been prepared without thick cocoa.
