Chocolate Mochi – A unique twist on the traditional Japanese rice cake

Chocolate mochi is a delightful variation of the traditional Japanese rice cake made from glutinous rice flour, known as mochiko. It incorporates chocolate into the mochi dough, resulting in a chewy, sweet treat with a rich chocolate flavor.

  • 1 teaspoon baking powder
  • 1 cup water
  • 1/2 cup milk (you can use dairy or non-dairy milk)
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar or cocoa powder for dusting

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish (such as an 8×8 inch square pan) or line it with parchment paper for easy removal.
  2. In a mixing bowl, sift together the mochiko, granulated sugar, cocoa powder, and baking powder. This helps to ensure there are no lumps in the mixture.
  3. In a separate bowl, whisk together the water, milk, vegetable oil, and vanilla extract until well combined.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring until you have a smooth batter. Make sure there are no lumps.
  5. Pour the batter into the prepared baking dish and spread it out evenly with a spatula.
  6. Bake in the preheated oven for about 50-60 minutes, or until the top is set and a toothpick inserted into the center comes out clean.
  7. Remove the chocolate mochi from the oven and let it cool in the baking dish for about 10-15 minutes.
  8. Once cooled slightly, you can cut the chocolate mochi into squares or other desired shapes using a sharp knife.
  9. Optionally, dust the chocolate mochi with powdered sugar or cocoa powder for a decorative touch.
