TAKE A TOUR TO FIND OUT HOW TO PRODUCE CHOCOLATE? 🤔
To create a chocolate bar, the manufacturer must go through many stages:
The first step is to harvest the cocoa pod, which grows in the humid tropical lowland forests of Central and South America, West Africa and Southeast Asia. Cocoa beans develop in the pods, sprouting from the trunk and branches, the pods are green and turn orange when ripe. The harvester uses a milling cutter and gently chops the cocoa pods from the trunk.
✌️ Followed by cocoa pods which can contain up to 50 cocoa beans. (Cocoa beans are not brown and do not have the sweetness like chocolate as many people think)
🤟 Followed by the fermentation stage, the cocoa beans are placed in the wooden box, then it is covered with a layer of banana leaves. Fermentation is when the seeds turn brown, which lasts between 5 and 8 days.
The next stage is drying, which usually takes about a week. When dried, the seeds weigh only half of their original weight.
🖐 Next is the stage of roasting and screening cocoa, cocoa beans are roasted to create colors and flavors suitable for consumers’ taste. Depending on the type of cocoa, the beans are roasted at 250-350 degrees for 30 minutes to two hours. Next, the seeds are screened to remove the outer shell.
🖐👍 Then the grinding stage. After removing the shell, the cocoa bean is put into a grinding machine until it becomes a liquid mixture due to the amount of cocoa butter secreted from the kernel, this mixture is called “Cocoa wine”. Then, cocoa liquor is mixed with flavorings depending on the recipe of each manufacturer.
🖐✌️ The penultimate stage, cocoa liquor continues to be mixed and processed so that after adding milk and sugar, the mixture will reach the desired smoothness.
🖐✌️👍 Then the mixture continues to be kneaded between large steel rollers. The process where the liquid mixture is heated and continuously stirred is called “conching”.
👌 Finally, the chocolate mold is closed, the chocolate mixture is poured into the mold and cooled until it becomes a solid form in various shapes. They are then packaged and distributed to the store.
