Can chocolate brioche be baked easily at home?

One of the most well-known combinations of bread and cocoa in the world is chocolate bread or chocolate brioche. This bread is typically made with cocoa powder or chocolate chips incorporated into the dough, resulting in a rich, chocolatey flavor and a soft, slightly sweet texture.

Here’s a recipe for making chocolate brioche:

Ingredients:

  • 2 and 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 2 and1/4 teaspoons active dry yeast (or 1 packet)
  • 1/2 cup warm milk
  • 3 large eggs, at room temperature
  • 1/2 cup unsalted butter, softened
  • 1/2 cup chocolate chips or chopped chocolate
  • Optional: 1 teaspoon vanilla extract

For the glaze (optional):

  • 1 egg, beaten
  • 1 tablespoon milk

Instructions:

  1. In a large mixing bowl, combine the flour, cocoa powder, sugar, salt, and yeast.
  2. In a separate bowl, whisk together the warm milk, eggs, and vanilla extract (if using).
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, or until smooth and elastic.
  5. Gradually add the softened butter, kneading until fully incorporated and the dough is smooth and shiny.
  6. Fold in the chocolate chips or chopped chocolate until evenly distributed throughout the dough.
  7. Place the dough in a greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  8. Punch down the risen dough and divide it into equal-sized portions, depending on the size of brioche you want to make.
  9. Shape each portion into a ball or desired shape and place them in a greased baking pan or on a baking sheet lined with parchment paper, leaving space between each.
  10. Cover the shaped dough with a clean kitchen towel and let them rise again for about 30-45 minutes.
  11. Preheat your oven to 375°F (190°C).
  12. If desired, brush the risen brioche with the beaten egg mixed with milk to create a shiny glaze.
  13. Bake the brioche in the preheated oven for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  14. Remove the brioche from the oven and let them cool on a wire rack before serving.
