Lamington Cake – An iconic Australian Dessert

Ingredients:

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the chocolate coating:

  • 3 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1/2 cup milk
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For coating:

  • 3 cups desiccated coconut

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, until well combined. Add the vanilla extract and mix until incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely in the pan on a wire rack.
  9. Once the cake is cooled, cut it into squares or rectangles, depending on your preference.
  10. To make the chocolate coating, combine the powdered sugar, cocoa powder, milk, butter, and vanilla extract in a medium saucepan over low heat. Stir constantly until the mixture is smooth and well combined.
  11. Place the desiccated coconut in a shallow bowl.
  12. Using a fork or tongs, dip each cake square into the chocolate coating, ensuring it is fully coated.
  13. Immediately roll the coated cake square in the desiccated coconut, covering all sides.
  14. Place the coated Lamington cake squares on a wire rack to set.
  15. Repeat the dipping and rolling process with the remaining cake squares.
  16. Allow the chocolate coating to set completely before serving.
