Chocolate Tartufo – An Italian ice cream dessert

Ingredients:

For the Chocolate Ganache:

  • 8 ounces (225g) semisweet or bittersweet chocolate, finely chopped
  • 1 cup (240ml) heavy cream
  • Pinch of salt

For the Filling:

  • 1 pint (475ml) chocolate ice cream
  • 1 pint (475ml) vanilla ice cream

For Coating:

  • Cocoa powder, chopped nuts, or chocolate shavings

Instructions:

  1. Prepare the Chocolate Ganache:
  • Place the finely chopped chocolate in a heatproof bowl.
  • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  • Pour the hot cream over the chopped chocolate and let it sit for about 2 minutes.
  • Add a pinch of salt, then gently whisk the mixture until smooth and glossy. Set aside to cool slightly.
  1. Assemble the Tartufo:
  • Line a small bowl or cupcake tin with plastic wrap, leaving enough overhang to cover the top of the tartufo later.
  • Spoon a layer of chocolate ganache into the bottom of each mold, about 1/4 inch thick.
  • Freeze the molds for about 10 minutes to set the ganache.
  1. Add the Ice Cream Layers:
  • Once the ganache has set, remove the molds from the freezer.
  • Scoop a small ball of chocolate ice cream and press it gently onto the ganache layer in each mold.
  • Repeat with vanilla ice cream, creating a second layer on top of the chocolate.
  • If necessary, use a spoon or offset spatula to smooth the ice cream layers.
  • Cover the molds with the overhanging plastic wrap and freeze until completely firm, preferably overnight.
  1. Coat the Tartufo:
  • Remove the tartufo from the molds by lifting them out using the plastic wrap.
  • Unwrap the plastic and roll each tartufo in cocoa powder, chopped nuts, or chocolate shavings until evenly coated.
  • Place the coated tartufo on a baking sheet lined with parchment paper and return them to the freezer until ready to serve.

  • To serve, place the tartufo on individual plates and let them sit at room temperature for a few minutes to soften slightly.
  • Optionally, garnish with whipped cream, fresh berries, or a drizzle of chocolate sauce before serving.
