- Sift the cocoa powder over the meringue mixture. Gently fold the cocoa powder into the meringue using a spatula until it is fully incorporated. Be careful not to deflate the meringue too much.
- Add the vanilla extract and gently fold it into the mixture.
- Spoon or pipe the meringue mixture onto the prepared baking sheet, forming small mounds spaced a few inches apart.
- Bake the meringue cookies in the preheated oven for about 45-55 minutes, or until they are dry and firm to the touch.
- Once baked, turn off the oven and leave the meringue cookies inside to cool completely with the oven door slightly ajar. This helps prevent them from cracking.
