Chocolate lava cake – A simple recipe for a well-known chocolate dessert
Chocolate lava cake, also known as molten chocolate cake or chocolate fondant, is a decadent dessert consisting of a rich and moist chocolate cake with a gooey, melted chocolate center. It’s often served warm and accompanied by vanilla ice cream, whipped cream, or fresh berries.
The defining characteristic of chocolate lava cake is its lava-like center, which is achieved by undercooking the cake slightly to leave the center molten. When served, the outer layer of the cake is firm, while the interior remains soft and runny, resembling flowing lava when cut into.
With following recipe, you can easily make your homemade chocolate lava cake.
Ingredients:
- 4 ounces semi-sweet or bittersweet chocolate, chopped
- 1/2 cup unsalted butter
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- Pinch of salt
- Optional: powdered sugar, cocoa powder, or fresh berries for garnish
Instructions:
- Preheat your oven to 425°F (220°C). Grease and lightly flour four 4-ounce ramekins or small oven-safe dishes.
- In a microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 20-30 second intervals, stirring between each interval, until the chocolate and butter are melted and smooth. Alternatively, you can melt the chocolate and butter together in a heatproof bowl set over a pot of simmering water (double boiler method). Remove from heat and let cool slightly.
- In a separate mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until well combined.
- Gradually whisk the melted chocolate mixture into the egg mixture until smooth.
- Sift in the flour and salt, and gently fold until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center still looks slightly jiggly.
- Remove the lava cakes from the oven and let them cool in the ramekins for a few minutes.
- Carefully run a knife around the edges of each cake to loosen them from the ramekins. Invert each cake onto a serving plate.
- Dust with powdered sugar or cocoa powder if desired, and garnish with fresh berries. Serve immediately, preferably with vanilla ice cream or whipped cream.
