  3. Prepare Wet Ingredients: In a small saucepan over low heat, melt together the honey (or maple syrup) and coconut oil, stirring until smooth. Remove from heat and stir in the vanilla extract.
  4. Combine Ingredients: Pour the melted honey-coconut oil mixture over the dry ingredients in the mixing bowl. Stir until the oats and nuts are evenly coated with the chocolate mixture.
  5. Spread Mixture: Spread the granola mixture evenly onto the prepared baking sheet, pressing it down slightly with a spatula or the back of a spoon to ensure an even layer.
  6. Bake: Bake the granola in the preheated oven for about 20-25 minutes, stirring halfway through, until it is lightly golden and crisp.
  7. Cool: Once done, remove the baking sheet from the oven and let the granola cool completely on the baking sheet. It will continue to crisp up as it cools.
