Ingredients:

For the Crust:

  • 1/2 cups chocolate cookie crumbs (you can use chocolate graham crackers or chocolate sandwich cookies)
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar (optional)

For the Cheesecake Filling:

  • 24 ounces (three 8 ounces packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips or chopped chocolate, melted
  • 1 tablespoon instant coffee or espresso powder (optional)
  • 2 tablespoons bourbon or rum (optional)

For the Ganache Topping:

  • 1 cup semisweet chocolate chips or chopped chocolate
  • 1/2 cup heavy cream

Optional Toppings:

  • Whipped cream
  • Chopped nuts
  • Mini marshmallows

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. Make the Crust:
  • In a bowl, mix together the chocolate cookie crumbs, melted butter, and granulated sugar (if using) until well combined.
  • Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
  • Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
  1. Make the Cheesecake Filling:
  • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract, melted chocolate, instant coffee or espresso powder (if using), and bourbon or rum (if using), until everything is well combined and smooth.
  1. Pour the filling over the cooled crust in the springform pan.
  1. Bake the Cheesecake:
  • Place the springform pan on a baking sheet (to catch any potential leaks) and bake in the preheated oven for 50-60 minutes, or until the edges are set but the center is still slightly jiggly.
  1. Prepare the Ganache Topping:
  • In a heatproof bowl, combine the semisweet chocolate chips (or chopped chocolate) and heavy cream.
  • Microwave the mixture in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and the mixture is smooth and glossy.
  1. Top the Cheesecake with Ganache:
  • Once the cheesecake is baked and cooled, pour the ganache over the top, spreading it evenly with a spatula.
  1. Chill the Cheesecake:
  • Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set completely.
