Chocolate macarons – An exquisite flavor

Macarons are popular all over the world and have become a symbol of French pastry craftsmanship. They come in a variety of flavors, colors, and fillings, making them a versatile and popular treat for any occasion. While their exact origins may be traced back to Italy, it is French refinement and creativity that have propelled the macaron to its prestigious standing in the world of pastry.

Chocolate macarons have a rich and intense chocolate flavor, balanced with the sweetness of the macaron shells and the creaminess of the ganache filling. The cocoa powder used in the macaron shells provides a deep chocolatey taste, while the dark chocolate ganache adds complexity and depth of flavor.

Making chocolate macarons can be a bit intricate, but with patience and attention to detail, you can create delicious and beautiful treats. Here’s a basic recipe to get you started:

Ingredients:

For the macaron shells:

  • 150g almond flour
  • 150g powdered sugar
  • 20g cocoa powder
  • 110g egg whites (aged, preferably at room temperature)
  • 150g granulated sugar
  • 37.5ml water

For the chocolate ganache filling:

  • 200g dark chocolate (finely chopped)
  • 200ml heavy cream
  • 30g unsalted butter (optional, for added richness)

Instructions:

  1. Prepare baking sheets: Line baking sheets with parchment paper or silicone mats. You can also use macaron templates if available.
  2. Prepare almond flour mixture: In a food processor, combine almond flour, powdered sugar, and cocoa powder. Pulse until well combined and fine in texture. Sift the mixture into a large mixing bowl to remove any lumps. Set aside.
  3. Make the meringue: In a clean, dry mixing bowl, whip the egg whites until foamy. Gradually add granulated sugar while continuing to whip. Whip until stiff peaks form. The meringue should be glossy and hold its shape.
  4. Fold dry ingredients into the meringue: Gently fold the almond flour mixture into the meringue using a spatula. Use a technique called macaronage, where you fold and gently press the mixture against the side of the bowl to deflate some of the air from the meringue. The batter should flow in ribbons and slowly settle back into itself.
  5. Pipe the macaron shells: Transfer the batter into a piping bag fitted with a round tip. Pipe small rounds onto the prepared baking sheets, leaving space between each shell. Tap the baking sheets gently on the counter to release any air bubbles and help the macarons spread slightly.
  6. Resting and drying: Let the piped macarons sit at room temperature for about 30 minutes to an hour. This allows them to develop a skin on the surface, which helps create the characteristic macaron feet during baking.
  7. Preheat the oven: Preheat your oven to 150°C (300°F) during the resting period.
  8. Bake the macarons: Once the macarons have developed a skin, bake them in the preheated oven for 12-15 minutes, rotating the trays halfway through baking. The macarons are done when they are set and easily lift off the parchment paper.
  9. Make the chocolate ganache: While the macarons are baking, prepare the chocolate ganache filling. Heat the heavy cream in a saucepan until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for a minute. Stir until smooth and glossy. If desired, add butter for extra richness.
  10. Assemble the macarons: Once the macaron shells have cooled completely, pair them up according to size. Pipe or spoon a small amount of chocolate ganache onto the flat side of one shell and sandwich it with another shell. Repeat with the remaining macarons.
  11. Mature the macarons: Place the filled macarons in an airtight container and refrigerate them for at least 24 hours before serving. This allows the flavors to meld and the texture to improve.
  12. Serve and enjoy: Bring the macarons to room temperature before serving. They can be stored in the refrigerator for up to a week or frozen for longer storage.
